Formula and methodology
Formula: oil amount=butter amount×oil fraction; remaining non-oil butter mass is not replaced by this volume estimate.
Butter contains water and milk solids in addition to fat, so an oil substitution is not a same-volume swap. The common 0.75 starting fraction is exposed as an input for recipe testing.
