Formula and methodology
Formula: Cook-time range = ham weight×minimum or maximum time rate; total planning range = cook-time range + rest time. The default rate converts the FSIS country-ham instruction of 20–25 min/lb into minutes per kilogram.
A time-per-weight estimate is only a planning window: ham type, whether it is raw or already cooked, bone, shape, starting temperature, oven accuracy, and the package method all matter. The rate is therefore an input, not a hidden universal constant. Stop relying on the clock alone and verify the center with a food thermometer and the applicable official or manufacturer instructions.
This result follows the calculator's declared inputs, precision, validation boundaries, and model limits.
Input contract
- Ham weight — kg; minimum 1.0E-6; maximum 100000
- Minimum time rate from product method — min/kg; minimum 1.0E-6; maximum 100000
- Maximum time rate from product method — min/kg; minimum 1.0E-6; maximum 100000
- Rest time — min; minimum 0; maximum 100000
- Thermometer target used for your method — °C; minimum 0; maximum 150
Worked example
| Input | Value |
|---|---|
| Ham weight | 2 |
| Minimum time rate from product method | 44.09245244 |
| Maximum time rate from product method | 55.11556555 |
| Rest time | 3 |
| Thermometer target used for your method | 62.8 |
Plan about 88.2–110.2 cooking minutes, or 91.2–113.2 minutes including 3 minutes of rest; verify the center reaches the method's required temperature.
Assumptions and limits
- The two time rates come from the selected product and cooking method; the defaults represent 20–25 minutes per pound converted to minutes per kilogram for a country-ham boiling example.
- The ham weight is entered in kilograms and the time rates use minutes per kilogram.
- Rest time is added to the planning window but does not replace the product's required rest instruction.
- The temperature field records the user's chosen thermometer target; it is not inferred from the time calculation.
- Different ham categories have different handling and reheating requirements, so the default scenario must not be reused blindly for another product.
- Cooking time does not guarantee doneness or safety; check the center with a calibrated thermometer and follow the label and local food-safety guidance.
- This calculator does not model oven power, pan cover, altitude, bone geometry, or carry-over cooking.
